SUMMARY

100% Chardonnay grapes hand harvested in mid October. Juice fermented in stainless steel tank. Aged in French oak barrels for 8 months. Natural malolactic fermentation. Bottled unfiltered in September 2011. 97 cases produced.

PRODUCTION NOTES
The 2010 growing season was one of the greatest in many years. Below average rainfall and above average temperatures resulted in optimal grape maturity. Yield was just short of 3 tons per acre.
 
At the winery grapes were whole cluster pressed.  The juice was fermented entirely in  stainless steel tank.  Fermentation was completed in 3 weeks at an average temperature of 58F.  The wine was transferred to French Oak barrel, average 3 year old barrels. It remained in barrel for 8 months before simple bentonite fining to accomplish moderate heat  stability.  Natural malolactic fermentation while in barrel. A very low amount of sulfite was added to this wine.  Bottled unfiltered in early September of 2011.  Released in October 2011.  97 cases produced.
